Mushroom and Herb Turkey Cutlet Rollups

Ingredients

1 3-6 oz turkey cutlet
1 cup cremini mushrooms, finely chopped
2 cups cremini mushrooms, sliced
1/2 cup sliced leeks, divided
1 clove garlic, minced
1/2 cup spinach leaves, chopped
1 cup spinach leaves
1 tbsp fresh sage, chopped
1 tsp fresh rosemary chopped
1 tbsp olive oil, divided
Sea salt and black pepper

Directions

  1. Preheat oven to 350 and line a baking sheet with parchment paper. Heat 1.5 tsp olive oil in a medium skillet over medium heat and add chopped mushrooms, leeks and garlic, sauté 5 minutes.
  2. Add spinach leaves, stir well and turn the heat off. Season with salt and pepper.
  3. Season turkey cutlet with salt and pepper. Spoon vegetable mixture into center of cutlet. Roll and place onto baking sheet. Bake for 25-30 minutes.
  4. Heat remaining oil in a skillet and add mushrooms and remaining leaks. Sauté 5 minutes. Add spinach and cook 5 minutes. Slice turkey cutlet roll-ups with a sharp knife and serve alongside sautéed mushrooms and spinach.
