Dijon Salmon and Grilled Vegetables

Cook time: 13 minutes

Ingredients

3-6 oz. salmon, skin on
1 cup bell pepper, coarsely chopped
½ cup red onion, coarsely chopped
4 oz. asparagus spears, ends trimmed

Ingredients for sauce

¼ cup Dijon mustard
1 tbsp olive oil
1 tsp fresh dill, chopped
1 tbsp fresh basil, chopped
¼ tsp sea salt
1/8 tsp black pepper

Directions

  1. Preheat grill to 400 degrees and grease with olive oil. Thread bell pepper and onion onto wooden skewers and set aside.
  2. Combine ingredients for dressing in a small bowl and stir to combine. Use a grill brush to brush skewered vegetables and salmon with sauce. Place salmon and skewered vegetables on grill and grill 3-4 minutes each side. Grill asparagus 5 minutes. Serve hot.
